Cookbook recommendations

Can anyone recommend a healthy cookbook that doesn't use tons of ingredients that you have to go out and buy and will probably never use again? Just want something for genuinely busy people who need quick, healthy recipes with few ingredients. Any suggestions?

It depends on what ingredients you already have and tend to use, tbf.

But I like the roasting tin books. Very easy, simple recipes.

I like this one for fast recipes…. In Minutes by Clodagh McKenna

And I love the website www.themediterraneandish.com/ for some really tasty, healthy and very varied recipes.

I think Nigel slater is generally fairly straightforward, but haven’t looked at any of his books recently.

Not a book but the bbc good food website is good or maybe try Gusto.
