Blood results normal. Still feeling unwell

Any doctors out there that can help me.

Since my jab on 29th April I've been feeling weak and fatigued. I seem to be hungry all the time also. Drinking lots of water.

Sometimes throughout the day I feel shaky as if I am having a diabetic hypo. When I eat something it eases. Constantly feeling fatigued and weak and very pale. Sometimes out if breathe.
Spoke to doctor and had blood tests for diabetes, thyroid and low iron levels.

I bought a diabetes home testing kit and my glucose levels are Sometimes high and sometimes low. Higher/lower than a normal.

Just rang my doctors surgery for results and receptionist said results are normal. Ive made another doctors appointment as I am still feeling unwell.
I really don't understand how bloods have come back as normal when I feeling like this and blood glucose home testing is showing high and low levels.

When I went for blood test it was in the morning and I hadn't eaten anything. Doc didn't advise whether I should fast or not.

I am 45 and female and over weight.

Any suggestions on what I should say to doctor? Do I ask for more tests?
I don't want to be fobbed off as clearly something is wrong with me.

Morning before breakfast 8.3mmol. After breakfast 2 hours later 6.6mmol

Have you got any other things which may be causing fatigue... Mental fatigue, emotional fatigue maybe? These can make us feel physically drained and fatigued if unchecked
