When walking, what side of the road should you walk on?

If you are walking on the road (ie not the pavement) you should face the traffic !

Why is this in the Health section?

You shoudl always walk so you are facing the oncoming traffic. I suppose if you walked on the wrong side it would amount to a health hazard so I'll let you off!!!

On the R, facing oncoming traffic, is the general rule, but if there is a bend in the road that will hide you, cross to the other side until you are round it (but keep your ears open for traffic from behind)

Facing the traffic, though if you were in a large group (e.g. sponsored walk) you should walk in direction of traffic. But you should always try to be visible to traffic - so you may need to cross over for bends etc.
