How would I know if DS1 had coeliac disease?

I'm wondering whether he does. He is very small for his age, he constantly has diarrhoea and complains a lot of tummy ache. He's also very windy!! Does this sound like coeliac?

Could be. Do not start excluding gluten. No diagnostic test will pick up coeliacs once gluten has been excluded. Get a referral, they'll do a blood test which will give a fair idea but formal diagnosis requires an endoscopy.

I would take him to the GP and raise your concern. My LO has Crohns Disease from birth but wasn't diagnosed until 3.5yrs!!
