Has anyone any idea how to go about researching a family tree that has been affected by the Holocaust? I know that there are several complete dead ends because whole communities were destroyed. And after the war survivors were scattered across the world.

Maybe you could try some Jewish forums on Facebook and ask there. Sorry not to be more helpful!
If you know the surname, you could start looking in either Ashkenazi or Sephardi groups.

I'd love to know this. My mum's family were Jewish refugees from Poland. We've been told that their surname is a Polish town and was common for people to lose their Polish name and Anglicise it in this way but we don't know if that's true and if it is what their real name was.

That's another challenge - name changes as people hid/escaped/started over again in another country.

I had lots of help via (I think they were called ?) Spanish and Portuguese Sephardi something in London even though my ancestors mostly went to the American colonies - definitely one of the more emotional parts of family history stuff. There must be something similar for Eastern European people?

A DNA test can also help match you to living relatives, anywhere in the world. The difficulty with Jewish genealogy is that there is often lots of marriage within the community which can make disentangling the results difficult.
