Help! Anyone good at Apple iPad/iPhone queries?

So I have an iPhone, there are 2 iPads the kids have each. Each tablet has its own iCloud account but my Apple ID as i put the password in for apps etc. ... BUT

I have a new iPad. This is to replace one of the kids iPads. I need to get everything off the old iPad, and put onto the new iPad. THEN The old iPad will become mine....

With me so far? How can I do this? The iPad that will become mine.... I don't want my messages and everything go onto it from my phone. So do I then wipe the old tablet but use the same Apple ID as on the kids tablets?? Confused!

Back up one of the kids' tablets to iCloud. When you set up the new iPad, select the option to restore from iCloud. Then restore the old iPad to factory settings, and type in your Apple ID.

I don't want my messages and everything go onto it from my phone.
There will be an option in Settings to disable that (possibly under iCloud).
