how to disable apple account (if ipad got stolen)

God forbid but we are taking our kids ipads on holiday with us this year. They are both linked to the same account. If they were to go awol how would we go about quickly disabling the account to avoid someone racking up a huge iTunes bill or spending on its etc

I mean there is a password on the Apple account of course but no password on the front screen of the iPad. Can these things be reset or unlocked? Sorry I'm not very tech minded

i think if you have the find my iPad app, you can log into iCloud and erase the data if it gets lost or stolen, i know you can on the iPhone.
