Help with iPhone - syncing and deleting apps

I used to be able to touch any app for a few seconds, they'd all then wobble and have a 'x' in one corner so if I wanted to delete any I could. Now if I do this, they wobble but there is no 'x' and so I can't delete!

Also when I connect to my laptop, I'm not convinced my apps are syncing properly and the music I purchase on iTunes isn't transferring to my phone. When I connect, it comes up with an error - "An unknown error occurred (-42110)."

Any ideas on how to rectify these would be greatly appreciated!

There are some apps that are undeletable like iMessage, photos, settings

Is it possible they are the ones that you can't delete. They wobble but don't have the x on them.
Or another possibility is that within settings you have turned off the 'deleting apps' option.
