Ipod touch expert please

I have an ipod touch registered in my name.

My son has his own email address

Can I keep the ipod touch registered to me but let him use it to face time and chat but with his email address so my email doesn't come up to his friends?

if you go to Settings -> FaceTime, and, it should allow you to add new email address where people can reach you. The email address can be different from Apple registered address, I have the same thing in my iPhone and settings in iPhone and iPod are the same. Go to settings and try.
