Definitely turn off data roaming.

And consider putting it on flight safe except at the times you actually want to check messages or return calls and texts (means you only do the necessary, and don't waste expensive minutes on chitchat).

Turn 3G off as you only need it for internet and if you are not using that, you will save on battery power.

You can connect to Wifi if the hotel have it, or in coffee bars.

I have a mifi - a mobile wifi - basically a wireless modem that I can put a local sim card into. If you go on holiday to the same country often, or for a longer period, then it might be worthwhile getting one.

I go to Egypt on business a fair bit. Just be careful of call costs too. They are eye wateringly expensive in Egypt. Even text messages are expensive to send. If memory serves me right, it's like 35p a text.

Your iphone should be automatically set to off for roaming so unless you've changed it, you should be fine.

I turned off data roaming and Cellular data when I went abroad and used hotel wifi. My bill was normal.
