When do I prune a fruiting cherry tree, camelias, rhododendrons and azaleas?

Have taken over a hugely overgrown garden, and need to clear lots of it so we can get some daylight into the house. There's an enormous cherry tree which should fruit, but it's always attacked by birds before it gets a chance to. I'd like to prune it asap, but have been advised to wait until June. Is this for fruit reasons, in which case i don't care, or could i damage it?

Also, do camelias mind when they are pruned? I'm not too fussed about affecting flowering for the next year, i just want the clear some space.
