I have just moved house and inherited this poor soul 😞

I am going to dig it out and plant it better - but can anyone advise how to prune it to allow more leaves to grow on the branches and not just on the ends?

What a poorly Pieris! They like acidic soil but will cope with neutral soil. Needs to be in partial shade away from cold winds. The new red growth is also susceptible to frost.
They can be pruned quite hard but I would just shorten the branch on the right for now. If you can leave some growth on the branch I find they shoot more readily.
