Why did my spinach bolt????

Afraid once it's bolted that's it. It is rather early, but apparently spinach likes consistent moisture to avoid bolting, so I expect the latest downpours are whats triggered it.

You could keep it going and harvest the seeds for next year - or give up on spinach and try swiss chard instead which is much more reliable.

Twiglett 'bolting' is when the plant gives up growing normally and shoots up a flower stalk instead.

Can't you chop off the flowering stalks and see if it sprouts again? I did it with lettuce last year, nd there were a few nice leves.
But spinach is quite easy to sow and comes up quick , so maybe best to just sow more. Gosh, ours is still very small, you're doin well to have it so far ahead..

I have planted a second lot about a month behind the first, i think they are ok. I will pull up the spinach and make way for something else. DP will be pleased, he doesnt much like spinach
