Put all your veg waste, egg shells and lawn clippings. No cooked food. If it gets a bit wet put layer of newspaper shredded up. (think you need to do this anyway to add carbon??!!)Add dry stuff like screwed up loo rolls and egg boxes. Then add more wet stuff. Try to turn it to mix it up and aerate it regularly.
Your local council may have info and there are loads of websites that helped me.

Egg shells, newspaper, grass cuttings, teabags, fruit peels ...

Do you have a shelf at the bottom of the composter??

I've had a composter for YEARS, and I always put leftover rice, pasta, cooked veg in it. I've never had a rat.

We had some mice in it, once - but if your garden is anything like mine, it's heaving with cats. No mouse lasts for very long.
