So how is everyone planning to use up their courgettes this year?

I made a courgette loaf today, which was great. So that's one down. 20+ more to go.

I often do grated courgette sauce for pasta. It’s really nice slightly cooked with spring onion and then prawns added or grated courgette and carrot slightly cooked with something spicy. I also add it to the sauce when doing meatballs or spaghetti bolognese and to risottos.

as a bludgeon for any family member complaining that we are having courgette yet again?

I need to internalise the lesson that no family needs more than one courgette plant.

Fritters are popular. I blend it in to anything I think I can get away with. Salt and pepper zucchini recipe (basically cooked with panko crumbs for texture).

Jamie Oliver has an amazing recipe for courgette, feta and dried chillie scones which are amazing, and can be frozen. They are brilliant with a dried/ poached egg of as snacks on their own!

another good one is a courgette, lemon, feta linguini dish.

I love courgettes so much and wish I could grow my own but the ruddy squirrels eat the flowers before they turn into courgettes!

I am very envious that you don’t know what to do with them! 😊😊

Claire Thomson (@5oclockapron on IG) does a kind of potato salad treatment with tahini dressing.
You boil courgettes whole and press them under something heavy to remove moisture then add tahini, garlic, lemon juice, olive oil and herbs. It's so easy and summery, I've made it over and over this year.
If you google 5oclockapron squashed courgettes it should be easy to find.

These are great ideas!

I made Stanley Tucci'ms spaghetti alla nerano tonight - a simple and delicious dish that calls for fried slices of courgette mixed in with the pasta (I added pancetta too). Divine!

Next up is a Greek style courgette and feta frittata with lots of fresh dill.

I like just a pile of thinly sliced (lengthways) griddled courgettes (mixed with olive oil and a pinch of salt beforehand), then just a squeeze of lemon over… maybe some chopped mint. Feta would go well with it too.

Gratin of grated courgette - squeeze the moisture out in a clean towel. Mix an egg with some cream or Greek yoghurt. Pour over the courgette, mix together and put in a oven proof dish. Sprinkle with grated parmesan and basil leaves. Bake until just set.

Watching with interest, I have a salad drawer full of them from my 3 courgette plants! So far just roasted or stir fried them.
I saw a recipe for courgette fries the other day with a polenta and parmesan coating that looks good.

I'll second lime and courgette cake. Also courgette and ricotta lasagne. I'm eating them freshly picked and not too big grated into my lunchtime salad. Off to try fritters now!

I finely slice them into ribbons with a peeler, season , drizzle with olive oil and lemon juice then sprinkle feta or mozzarella and chilli flakes over the top. It’s delicious with bbq meats.

Last night we had courgettes sliced lengthwise and grilled on the bbq alongside other grilled veg and chicken skewers. Everything coated in olive oil, garlic and fresh thyme. Simple but so yummy

Fry a red onion in olive oil add courgettes diced.
Boil some baby broad beans until just tender and add to the frying pan with some thyme, heat through, season and add a good squeeze of lemon juice.
Serve hot or cold.

Can also substitute walnuts for bacon and I often grate in a small potato too.

We won a dehydrator in a raffle (niche!) and slice and dry surplus to throw into soups/ stews etc the rest of the year.
