Where did my carrots go?!

I had sewed and just thinned out a few lines of carrot seedlings in my veg patch (have grown them the last 2 years with no issues) and overnight they have just vanished along with half of my parsnip seedlings! There's no disturbance to the soil, can't see any slug or small trails and there's not a sign of any remains, it's like they were never there to begin with. Even dug into the soil and there's just nothing... no leftover roots etc?! Any idea of what did this and how I can protect against it in future? I've got copper tape around the veg planters (was wary of using slug pellets as my toddler likes to help me with the gardening) but I'm aware bigger slugs don't seem to mind it the way smaller ones do. Everything else is growing nicely and apart from the odd hole in my radish leaves everything is pretty much intact. Very much learning as I go so any advice is welcome!

I saw a film where a similar thing happened. Carrots disappeared whilst the ground appeared untouched.

Later on in the film Bugs Bunny was seen with armfuls of carrots and a very contented grin.

It is the only logical explanation!!

I don't think it's rabbits though, we're urban and most of the houses round us just have paved yards so not much by the way of wildlife. We've lots of birds but they've never touched our plants before.

Squirrels- they eat all my veg I won’t plant any this year as it’s pointless they seem to eat it all within a few hours when it’s just about ready to eat 😑 they are great at covering their tracks because they are so light!

I don't think I've ever seen a squirrel near here, we've very few trees and as I say we're in an estate in a very urban area and not near any parks etc that I'd expect a squirrel to hang out. We do get mice and rats but I'd have figured they'd take more than just the carrots?
