Will potatoes grow if the sprouting tubers are quite long - 2- 3 inches ?

Ywa, but be careful when planting them because they're easy to knock off.

Yeah they will but you want the chits to be green/purple and stubby. If they’re long, thin and white it means they’ve sprouted in the dark and will be weak and break easily. Ideally you’ll knock off any white shoots and start again.
