I'd appreciate recommendations for a patio Apple tree that will be happy in a pot. Eating apple preferably.

Also how big a pot do I need?

Unless you're planning on having two different varieties or a nearby neighbour has an apple tree, make sure whatever variety you get is self fertile. Lots of them need to be cross pollinated. Other than that, I think it's the rootstock you need to check. Your chosen variety will likely be a graft and the rootstock will determine the size of the plant.

as pl says, it's about the root stock.
the apple variety doesn't matter much as it's grafted.

you can even get ones that have more than one variety.

go to a garden centre and have a look. however, from october is bare root season and you might be able to get a good deal.

wrt pot size, it needs at least 50l, better if bigger. builder's buckets/troughs are a good size.

if you are on a balcony you need to check weight limits.
