When we bought our house we inherited lots of ever-greens, which we niavely thought were miniatures. Three years later and it damned obvious that they're not.

What's the best time to prune them and how far back can I go without totally killing them?

to be honest you need to identify what they are. there are several ways of pruning and you need to know what something is in order to know how and when to prune it. you might be able to identify it through some good googling, and then do some more googling and you should be able to find out how to prune it, otherwise you could be really old-fashioned and buy a book. sorry not to be more helpful
