Any celery advice

I've surprisingly successfully grown celery for the first time. It is a bit stringy but flavourful, the stems are still pinkish but apparently they self whiten as they get bigger.
Can I just leave it in the ground to use over the winter or will it go to seed, get too tough and stringy. I plan to freeze most of it but the stems are mainly about 1cm at the moment can I leave it to get bigger till later in the year?
