Complete novice...help me plant up

So I have some planters which I would like to stock with flowering plants and nice grass or something over the autumn and winter.

But I have no idea where to start

Well I have planted mint, rosemary and lavender

I have some Miscanthus grass in oblong planters. It is in lovely plume flowers now. You should be able to get some at the garden centre, as this is their season. Although they die off in the winter, I leave mine so the frost glints on the seed heads.
3 in each of your long planters would look good. Michaelmas daisies are also Autumn flowers and a small variety would look pretty with the grasses.

The lovely colour of your fencing immediately made me think that this grass would look stunning in front of it (festuca amethystina)...

I find not much will grow in the winter. Even if you plant evergreens they don't grow much then. But I am in Scotland and it's windy and wet.

I have a sarcoccara ?sp which is an evergreen shrub and produces tiny sweet smelling flowers in the winter. Ivy will keep it's leaves. The garden centres sell pansies but they've never done well for me. Little conifers? then put lights on at Xmas.

I don't know much about grasses.

We have a hebe midnight sky, it has very dark purple glossy leaves which were stunning all winter, and then in summer it gets greener and flowers purple. Lovely plant, I am seeking another for nearer the house so I can admire it more over winter.

Would look glorious against that fence.
