What are these weeds?

Please help me identify these weeds and how in the world to get rid of them!
I can only describe them as mini Christmas trees...
We brought the house last year and saw none when looking around. Now the whole garden has been taken over and they just don't seem to die! When trying to pull them out it doesn't ever feel like we are getting the whole root so they are just coming back. Weed killer doesn't seem to touch them. I'm so depressed by the garden now I just don't know what to do!

Mares tail. They’re a nightmare. You can never get them out completely as the roots can be 2m long. If you keep pulling them up as soon as you see them the plant gets weaker and you’ll get less and less over time.

We have it in our garden. It’ll take over if you let it but also, it’s as old as the dinosaurs. So I let a little bit live because I admire its tenacity. And the pull the rest out.
