They are alliums. Part of the onion family - I don’t mind the smell but many don’t like it, and yes, the water always turns that colour when I cut mine and bring them in. They do dry though, maybe that would be an option?

The flowers are called Allium. I don't know about the water turning purple.

No. Didn't put any flower food in. Just looks a bit strange with purple water. Wasn't the look I was trying to achieve.

Onions can be used to dye cloth, so the water colour is not a surprise
