How do I make a tall grape vine, short?

I have just bought a grape vine (v Phoenix) to grow along a South East wall under some windows about 1.3m. A neighbour (who has since moved) has done similarly so I know it could work. They have since moved…

However, the grape vine I bought is about six foot tall. How do I make it short and branched out horizontally like they look in vineyards? (And my neighbours garden.)?

Just prune it to the height you want. We have a grapevine that was totally overgrown when we moved in. We pruned it’s down to about 2 feet and it sprouted again and had loads of grapes.

It's a single stem. I don't really think I have much choice but to chop it!

Basically you prune back the main shoot, and use side shoots to train sideways.
