a voucher for a garden centre is probably the best bet unless you know something they specifically want.

Or one of those small trugs packed with a few packets of seed, a pair of gardening gloves, a hand trowel/fork, garden twine, plants labels and any other bits like that, that you can pick up in somewhere like Wilkos.

compost, secateurs, gloves, sweet pea seeds, as they can be started in January :)
