Where the leaves join the main stem, the plant often produces a little shoot in the axil. These should be removed as soon as they appear to concentrate all the growth in the main stem. Towards the end of the fruiting season when the fruits are not expected to ripen you can remove the top of the main stem, to prevent further growth and help the fruit to ripen.

Or if you mean literally how- you use your thumb nail against your index finger to snap off the growing tip.
For side shoots you can often just rub the little shoot off with your thumb.
