Kniphofia/red hot poker pruning

Our have flowered for the first time and the first flower head is just coming to an end and ready to cut back, or far do we cut it? Do we just cut the 'head' off or do we cut back the stem right down to the crown? Stems are currently about 2ft high.

I have then at the front of the house.
I have done bugger all to then for the last 5 years and they come back every year.

Leave it, it will die back over winter, rejuvenate, then you just need to cut off the dead stalks next spring.
