Very proudly pulled first beet! Can i eat the leaves ?

Am feeling extremely proud just now of my first beetroot.
Can i wash the leaves and chuck them in our salad please ?

You can eat it either way.
Raw beetroot is very healthy. Nice grated in a salad with grated carrot and orange juice.
Cooked is lovely in a soup with lots of other grated veg. Borsch = russian beetroot soup, is delicious but does take a while to cook.

But it is messy and leaves stains!

gOD HOW FAB.
Have just eaten my current fave which is beetroot sliced with crumbled fetta,walnuts and mint with vinaigrette.

Had it with locally reared pork and locally grown asparagus and potatoes.

Would have been better still if homegrown.

When did you plant them out Fakeblonde? I pulled one of mine and it was tiny!! How did you know they were ready ?

I could see the bulb coming up out of the soil-think i originally planted the seeds about 3 months or so ago.
The leaves were well nice in our salad.We had rocket,onion basil coriander with a drizzle of olive oil ALL out of the garden-how proud was i !!!!!!!!!!!!
Think i will deffo grate it burek as dont think i small beetroot warrents what mother reckons should be 1 1/2 cooking .

You can roast them wrapped in foil for about an hour. drizzle with herbs olice oil and balsamic vinegar first.
