Flowering yucca - what do I do with it

So, my normally boring 'Palm tree' looks like this at the minute - the stem practically appeared out of the blue!

It's been stunning (tip must reach over 7ft) but dying off now

What do I do with the flower stem - does it stay, do I cut it down as far in to the leaves, do I leave it to sort it's self?

Will it continue to produce new leaves? It was in such a sorry state when we bought the house but all I've done is yank off brown leaves and water the plants around it!

Thanks for any advice

Just leave it. I have a variegated form which flowers every year, and leave the dead stems alone until the following year, when it can be pulled out easily. It does look a bit unsightly, but that doesn't bother me. As Yuccas are such 'unfriendly' plants, with a tendency to stab you, I prefer to leave well alone - mine has two large heads. It will continue to grow quite happily, and should flower every year.
