Is this a yew tree please? I’ve got to replace a couple in a hedge

remember all parts of the yew are poisonous, except the red bits of the berries (the seeds are)

Yes , they respond very well to hard pruning and will grow back into whatever shape you trim them to. Slow growing but not glacial
