Looks like it might be bergenia?
Are there any flowers coming. It normally flowers in spring time.

No - no flowers at all! Looked to be a weed but maybe we shouldn't pull it out?! Has really think and twisted stalks

Not bindweed.
I thought it was celandine until you said about the thick stalks, and maybe it's bigger than it looked to me - which takes us back to bergenia.

Bergenia. Maybe it's not flowering because it's too crowded.
