When to shape a rowan.

Rowan tree is getting too tall and I want to take out the central stem. Any tips on when ? NW England. And is there a kind way to cut ?

The general advice is to prune during the winter.
I'm no expert on this sort of business though. Have a look at the RHS website for some tips on which branches to cut etc.
