am currently drying them out ready for eating but not sure if we are doing it correctly. I've just cut the heads off and brought inside.

should I be removing the seeds now or wait till they've turned brown?

I have always waited for them to go brown before I cut the heads off, You do need to keep them very dry and not put the heads anywhere where they can get damp or your seeds will go mouldy. If they are truning the right colour then you can take them out now and just finish drying them. HTH
