What does this mean? Is it starting to die off or something?

Thanks!

Its just doing what its designed to do.If you nip off the flowers it will go back to producing leaves. If you leave the flowers on,it won't die,but the flavour might not be so good as all the energy wil;l go into flowers/seed production.

You could also let it flower, go to seed and then you will be able to use the seeds next year to make new plants.
