Our sweet peas are a bit weedy looking

DS1 and I raised them from seed. They've been hardened off for a week and DS1 painstakingly planted out 2 dozen plants today, to (hopefully) scramble over some trellis. Was great to see him do it as he's famously poor at staying on task.

Anyway, they're in, but they're a bit long and straggly. Should I have pinched the tops out to make them bushier? Can I still do it now?

Yes to punching out and whilst it is best to do when young (after second pair of leaves has grown) you can do still do it. A little fish blood and bone meal will chivy them along quite nicely, too.
