Purple Hazel - when do I harvest nuts?

We have an old purple hazel which had nuts the first year we were here and then has been barren the past few years. It is laden again this year but I am very green on the nut front.

When do I harvest them? They are in clumps atm and look a decent size but when the purple is pulled off they have a green tinge. They are a decent size.

Any suggestions on storage or what to do with them once they are harvested?

As an aside, when DS opened the first one, a
wee little purple ladybird with white spots crawled out. I am liking our ( not so little ) nut tree.

I have googled and the pics I have seen all have the nuts poking out of the protective purple cover. Mine are all totally enclosed, so I am guessing I need to leave them another few months. How do I stop the squirrels getting them?
