Need to train for a new, better paid job

Hi everyone,
I apologise if i havent picked the correct chat topic, i went through them all but was a bit unsure which one was best to select.
I appreciate any help that anyone can give me.
I am 38 and have 2 children. When i was 18 i qualified as a nursery nurse. I worked really hard to achieve distinctions on my assignments and to receive my diploma.
I didnt realise that i would end up qualified in a job which is not only very challenging but also usually only paid a minimum wage.
I am also NVQ level 2 trained in health and social care with background in caring for the elderly mentally ill.
Before i ask my question, i would like it known that i am not money driven, however i want to be self sufficient and a good provider.
I want to train in something new, preferably through distance learning.
I dont mind paying for my training.
Basically I am asking what would be the best thing to train as which
▪️Doesnt require a massive amount of education (i.e degree or 3 different stage diploma's)
▪️Is fairly easy to be accepted on
▪️and most inportantly will be paid a better amount than minimum wage.

Would also be a bonus if i could train in something which i can do freelance/self employed, but also have the option to work within a company.
I have an interest in law and psychology.
I am not intellegent enough to be a solicitor or a doctor so please dont suggest that! lol
Although there was a time when i would of considered myself slightly intelligent, I have been on certain medication for almost 2 decades and it has impacted my brain function, memory and intellect.

without knowing your skills and what you like/dislike it’s hard to give anything more specific
