Boeuf Bourguignon - does anyone have a really good recipe?

We have invited our gourmet foodie neighbour for dinner tonight, and I have a lovely cut of beef.

I thought I would serve it with a salad and plenty of crusty white bread. Might even bake the bread myself.

Or do you think that it is too warm for such a heavy meal?

I have the beef already though, so I will have to use it.

I have a lovely beef in red wine recipe handed down through our family, but its best made the day before.

Also I guess I saw this a bit late, sorry. You can freeze the beef and have something else. But I guess you have already decided what you're doing now.

Thanks, Taffeta. I found Julia Child's recipe, it was delicious.
