What do you want to do with it? Beef mince can be cooked in a thousand ways. Do you want a tomatoey sauce (bolognaise) or just a meaty sauce?

But at it's most simple, fry some onion and garlic in some olive oil then once it's translucent and soft, add the mince and fry until browned. then add your additional flavourings - tomoatoes and/or tomatoe paste, herbs, wine etc. If you don't want tomatoe, use some stock, a bit of worcester sauce etc. Or make it a little sweet by adding chutney/jam and some curry powder with dried fruit (sounds hideous, but delicious).

Put a lid on and simmer for anything from 30 minutes to 2 hours. Then eat.

But if you want specific recipes, you need to be more detailed.

I simmer for around 1 1/2 hours or more. Then it is really tender.

Yes, the mince is cooked through from about 30minutes, but something good happens to the flavour and texture at about 90 minutes into cooking.
