Broad beans, feta cheese.... give me your ideas please!

baby broad beans, feta, mint, olive oil. mix together as salad. Can also add chorizo for a bit of va va voom. If grown up broad beans, cook and peel first (a bit of a fag, but definitely worth it)...

Is that ok?

lightly steam broad beans.

stir fry red onion, red peppers, muchrooms, bacon, add feta and broad beans, lots of ground black pepper, serve with pastA, crusty bread, green salad.

Or you could boil and peel beans as I said earlier, then puree w olive oil, garlic and feta, to make a sort of bean hommous...

(disclaimer: have just made this up, have no idea whether it would be nice, but I'd try it.....!)

Mash broad beans with Garlic, olive oil, some sort of fresh herb, maybe tarragon.
spread on ciabatta and toast, top with feta cheese, voila sort of broad bean bruschetta

My idea is that you send them to me. I lurve broad beans and nobody else will eat them, so I never get to have them.

I would lightly steam the beans, then pop them out of their pods. I would then mix them with some baby spinach, chopped spring onions (tiny ones so not too strongly flavoured) and a v light lemony dressing with black pepper, then crumble the feta over it and eat with lovely bread.

there are some fantastic ideas here, thanks so much. This is tomorrow's supper, once I've picked said beans in the morning!!!

I have a friend over for lunch tomorrow and will also pick in the morning, have loads!

I am either going to do:

  • raw with shavings/thin slices of pecorino
  • warm in a salad with dressing of mint, chervil, tarragon, chopped spring onions, tarragon or white wine vinegar, ex voo, seasoning with hot crusty bread
  • in a cream sauce with summer savory and pancetta with the ubiquitous crusty bread

Will see if we are feeling virtuous or naughty!
