Coconut shy champion, now what to do with 12 coconuts?

Dh and Ds are very proud of their prize cocnuts , but what can I do with fresh coconut?

Eat it as is. DD adores it - would eat a whole one. In fact, I love it too.

You can substitute fresh for desiccated in a lot of recipes, although if the recipe calls for the sweetened stuff you may want to add a little sugar. I use it freshly grated over curries - yum yum.
There are numerous coconut cake recipes - here's one with fresh coconut in.

We also like coconut with strawberries and lime juice. I expect you could make a pretty fabulous granola with it, and ice cream if you have an ice cream maker?

Madhur Jaffrey suggests shredding it and freezing it for use in curries (I can't find a link though, sorry).

ha ha, not as funny as the horse clip clop noises i can make with the coconut shells.
Funnily no one in the house finds it as hilarious as me.
