Fresh galangal and fresh turmeric - how to do them justice?

What the thread title says, really.

I imagine I should make a curry paste of some sort but am struggling to find a recipe that will do the freshness of the galangal and turmeric justice.

Any ideas? I've not cooked with either before.

We also have some lime leaves in the freezer and some tamarind puree (guess who's been to the Thai grocer this week!)

Make thai green curry paste with the galangal. Quick google gives this. I have a nigel slater recipe, and it's way way way nicer than any shop-bought jars. Lime leaves probably go in the actual curry as well.

Tamarind puree: Dan Lepard's tamarind date cake. Out of this world!
