Ok stressing a bit about small's B'day party this avo.

It's at 3.

When can I make the sandwiches and how do I keep them fresh?

When can I take the green bits off the strawberries and if I do will they go squidgy quicker?

Transporting all food to a venue with only a few mins to set up before start of party...
