Am so delighted that dd (15m) loves these I thought i would share! It was a receipe in Good Food June edition and is currently being enjoyed by the whole family!
2x medium sweet pots or 1 x large
1 tsp ground cumin
2 cloves garlic chopped
2 tsp ground coriande
handful fresh coriander leaves chopped
juice 1/2 lemon
100g plain flour
cook sweet pots in oven or microwave until flesh soft. Scoop pots out of skins (discard skins) and mix all ingredients together with potatoe masher. Make into golf sized balls (its pretty sticky stuff so i use two soup spoons) Pop into over at 180c on greased tray for 15 mins each side. Easy peasy!
I reckon it should make about 15ish but they don't tend to last long! I have also doubled up receipe which worked fine.
Reciepe suggest putting them into pittas with houmous and coleslaw for grown ups. DD loves them on their own. Also v healthy if like me you eat while your child eats!
