Help ! 0.5 kg of Fresh Ginger , any ideas?

Online shopping delivered today and discovered ive got around a pound of ginger , what do i do with it all?
does it freeze?
theres only so much thai curry i can eat so need some ideas.

Peel it and freeze it. Then you can grate/chop as needed

Ginger pickle (for curries)?
Could you bottle some of it in syrup to use for puddings/ice-cream?

I get through a lot of ginger making tea too - just chop some up and add to boiling water with a bit of lemon juice and honey. Much nicer than commercial ginger teas.

I can't see why not, although I find it easier to grate from frozen.

It is much easier to grate it when frozen than when fresh so I always peel it, cut into 1 inch chunks and stck in freezer.

I've frozen it successfully before. Peeled, and in lumps.

You don't need to peel it before you freeze it. Just freeze it as is then grate what you need off the whole chunk when you need it.
