Basil and creme fraiche sauce? do you think it will work for pasta for DC?

As usual on last minute making tea for DC. Haven't got any chopped toms - no fresh ones but have loads of fresh herbs in garden inc basil/oregano. I have creme fraiche in fridge. Was thinking of some concoction with pasta fried onions creme fraiche and basil

What do you think?

I have parmesan but no pine nuts so can't do pesto. No pesto in cupboard....

I promise I am going to meal plan for a month tonight!

I would omit the creme fraiche. Do you have any tomato puree? Mix with boiling water and add whizzed up basil and grated parmesan. Perhaps some fried onion and garlic too.

There's a gorgeous Nigel Slater recipe where you cook onions (quartered) in butter/splash olive oil/garlic really slowly at a very low temperature, then when they get really soft turn the heat up a bit and add a splosh of balsamic vinegar (or madeira wine if you have any!) till it goes brown and gooey and sticky. Then stir through cream (or creme fraiche), and lots of fresh basil.

Is delish with pasta, very sweet so DCs prob like it, altho not a diet option

DC's just had pasta with chopped basil (v.finely) yogurt, bit of mayo and some peas.

Told them it was pasta with white pesto. They ate it, could've been alot worse. But then mine will eat pasta in most shapes or form.

Sorry no can find! I have recipe in a book... just not in the same place as the book. Have made it without the book before and as long as you use something to make it sweet (balsamic, Madeira, Masala) it should be fine... good luck!

Do you have an egg? Stir an egg yolk into creme fraiche and heat/cook for a minute before adding to pasta.

Well it went down a treat although the onion could have done with a bit longer but they were starving! Thanks for the help.

will try the carbonara yolk thing next time - just could not get my brain to work

Yay! it does take donkey's years to do really nicely... but hope it solved a store cupboard nightmare.
