So what is everyone eating in this hot weather?

Meal planning before going shopping this week was a nightmare, I'd happily just live on salads in this weather but I think DH and the DC's would leave home...

Finally decided on:
Saturday: BBQ
Sunday: Picnic (lots of stuff from the supermarket deli counter)
Monday: Spinach and Ricotta Canneloni (I have a spinach glut in my garden)
Tuesday: Tortilla
Wednesday: Chicken, chickpea and couscous salad
Thursday: Spaghetti with tomato and chilli sauce
Friday: homemade Pizza
all served with copious amounts of salad, and fresh fruit for puds.

Just in case the sun continues to shine and I need sunny ideas for next week, what are you eating?

dh is another one who doesn't class salad as a meal. gggrrrrr

  • Today was burgers on the bbq with mozerella and homemade pesto and a salad with balsamic grilled tomatoes and lambs lettuce
  • Tommorrow will be bbq german knockwurst on the bbq in a bun with a rocket salad
  • Tuesday will be Grilled halloumi salad
  • Wednesday will be Crayfish and Mango Salad

Don't know bout the rest of the week.

I would love this today, but due to an error in my meal planning and not being paid the full amount the only ingrediants to make a full meal in our cuboard today was chicken and veg curry lol!

But we have got sorbet and frozen berries for pud, so i hope that cools everyone down.

But seriously curry! im boiling.

Today for Sunday lunch we had salmon in garlic butter, English asparagus, mange tout, new potatoes.
Strawberry ricotta tarts.

We had Hereford asparagus risotto served with a baby spinach salad.

Unfortunately, we now have to use up all the bits and bobs left over this week before doing a Sainsbo's order, so it is likely to be curry too!

I have some polenta in the cupboard - does anybody know any ways of making that edible, other than cornbread or cake?

rack of lamb and jersey royals with salad tomorrow
pasta puttanesca on Tues
Sainsburys on Weds.

I find it a struggle to meal plan in the summer, too. Took me ages to think up some nice summery meals before shopping this morning.

Today we had homemade burgers. I also made fat chips and colselaw. Was so delicious.

Rest of the week:

Mon: Salmon in sweet chilli marinade, potato salad and green salad
Tue: Spaghetti with king prawns (blasted in a big pan with loads of garlic, white wine, shallots, parsley and crushed up fresh cherry tomatoes)
Wed: Chicken kebabs, rice & salad
Thu: Greek/Turkish bits and pieces - halloumi, stuffed vine leaves, houmous, pitta, salad etc
Fri: Might do a big tortilla with salad

I've made a load of lollies myself and shoved in the freezer. Also made raspberry sorbet, and bought loads of lovely fruit.

AndieWalsh what do you make your lollies with? Got my lolly moulds at the ready This wk we shall be having- salmon fishcakes, homemade burgers. ham, pea and spinach risotto. Ham and pots. All with salad and coleslaw with some kind of potato. Should be more organised!

I love these foodie threads but, honestly, can't we have "with" instead of "served with". Unless you do actually run a restaurant of course.

Tonight we are having chicken fajitas served with salsa, guacamole, sour cream .

Tomorrow: salad nicoise.

Wednesday: chilli con carne.

The hot weather will be over by then!

I just use fresh juice (diluted) - more refreshing than scrumptious, best as a quencher when it's really hot - or I get the smoothie blender out and make all sorts of concoctions. Pretty much anything you'd make a smoothie with works well as a lolly, ime.

Strawberries, lemon juice, sugar and water in the blender make lovely lollies. You can substitute strawberries for raspberries, mango, pineapple (all lovely) - or could use pretty much any fruit, I suppose.

Strawberry yoghurt frozen in moulds makes nice, 'minimilk' tasting lollies.

It just makes me feel inadequate Janeite, cos all my food is bunged together on a plate. Serving doesn't really come in to it .

Well, given that I discovered yesterday that my wedding dress doesn't do up and I have to wear it for real in 6 weeks, we are taking a (relatively!) austere line in this household...

Yesderday was spaghetti marinara (I said relatively!).

Today was lemon sole baked with lime and chillis served with new potatoes and salad and then crudites, pitta and hummous for supper.

Monday will be bean chilli (no rice!)
Tuesday will be a curry on Brick Lane (hmmm...)
Wednesday will be leftover bean chilli
Thursday will be Cromer crab from the fish van with salad

And absolutely NO ice-cream. At all. All week.No matter how hot is gets....

we've had
hot artichoke dip (uses lots of spinach!)
pineapple and mango skewers
mini spicy beanburgers with wedges
chocolate balls (my new favourite favourite)
garlic courgette and mushroom pasta bake
german potato salad with sausages
roast chicken wraps with rocket & avocado
