I would make a mock dauphinoise with the potatoes (thinly slice pots, an onion some garlic salt and pepper, layer with butter, salt and pepper and a couple of tablespoons of stock - or cream if you don't care sprinkle top with cheese and bake for 40 mins. pan fry the thighs and pancetta in butter til brown and crispy and serve with steamed aspargus, dress with peppered butter and serve.

On Junior Marsterchef tonight a boy stuffed chicken thighs with blue cheese and wrapped them in pancetta and baked. You could use any cheese I suppose. You could just boil/steam and butter the asparagus to go with it.
