Can I make filo parcels ahead of time?

It's a recipe for salmon/pesto/mushroom wrapped in filo (brushed with butter). Will the parcels be ok in the fridge? Shall I cover them with clingfilm or what?

I know the answer!
You can keep them in the fridge, well covered with cling film, they'll be fine.
Or you can freeze them.

Brilliant - many thanks. Is the pastry still the same when cooked from frozen? Might do that next time.

I would defrost them first, but they will be fine then.

yes i think it's fine. in fact i have done that very thing, but with a cheese filling.

i've done with cheese and spinach and worked great. Think technically freezing might be a no no if pastry was frozen when you bought it, but i have done with no probs, just make sure propely hot. Not a huge believer in sell by dates etc...
