What can I do with lots of fresh cucumbers that doesn't involve pickling?

I have a bunch of organic cucumbers. What can I do with them? Does anyone have yummy recipes for cucumber salad?

I don't have time for pickling, BTW.

instant pickle - red wine vinegar, splash of olive oil, lots of salt and a pinch of sugar. Cut very thin lengthways.

I am rather addicted to it, I can eat an entire cucumber in one go.

cucumber soup - lovely for hotter weather and I think you could probably freeze it. no particular recipe to recommend but lots out there if you google

Salad which involves cucumbers:-

Cucumber (obviously!), cut into small chunks
Cubes of Feta cheese
Some cooked and cooled broad beans
Cubed avocado
Green olives, halved
Fresh mint, chopped
A dressing made with dash of lemon juice, some oil, small amount of grain mustard, salt and pepper.

Mix well

Eat

Can use them to make flavoured water too: jug of water in fridge plus melon balls, cucumber and mint - v tasty. Just don't leave it too long or resulting 'stew' gets a little TOO organic...

Or could use for beauty treatments (knowing nothing about these but remembering cucumber-type Boots products of my youth).

Tzatziki - grate the cucumbers, squeeze out as much liquid as you can and mix with yogurt and chopped mint (dried mint works ok if you don't have fresh)

Cucumber and dill salad

1 large cue
100ml rice wine vinegar
110g caster sugar
good bunch dill
salt and black pepper

Peel cue and slice as thinly as poss ( use mandolin or slicing disc on food proc if have ), remove the seeds only if lots of large ones but must remove skin.
Heat vinegar in small pan over low heat and stir in sugar until dissolved. Allow to cool.
Finely chop dill. Layer a quarter of cue in a small high sided dish and season sprinkle over quarter of dill over cue and repeat the layers.
Pour over vinegar cover and leave for at least an hour. Drain the liquid before you eat.

Cucumber is nice in gin and tonic instead of lemon or lime. I can get through loads that way. Peel and core a long section of it, then cut into chunky batons.
